Oladi - Russian Pancakes

After the deep fried yeasted flat bread from Hungary, my today's post goes to Russia, yes today am sharing Oladi, an incredible Russian Pancakes. These cute mini pancakes makes an excellent breakfast and they are seriously very easy to make with easy ingredients. Trust me this Oladi is definitely a fabulous breakfast pancakes to kick start a day. Oladi is prepared with buttermilk/Soured milk/Kefir-fermented milk.Kefir gives a distinguishing taste to oladi, but it probably can be replaced with buttermilk in case you are having troubles finding kefir.Kefir,this fermented milk is quite difficult to find out for me, so i made this fluffy mini pancakes with buttermilk, though you can also go for soured milk. By the way, soured milk is prepared by adding lemon juice or vinegar to milk.

Oladi, Russian Mini Pancakes


Russian cuisine have two different pancakes, blini and oladi. Blini are typically thin, like crepes, and oladi are thick, puffy pancakes. Some use yeast to make Oladi, but i sticked with an easy way of making Oladi. This version of making oladi is baking powder.I got this recipe from here, the author of this site says that her mom passed this recipe to her. Obviously this recipe rocks and everyone at home enjoyed thoroughly this pancakes for Sunday's brunch with jam.They were quite filling as well. 2cups All purpose flour
2nos Eggs
1tsp Baking powder
3tbsp Sugar
2cups Buttermilk
1/4tsp Salt
Oil for frying

Beat the eggs, sugar, salt well, slowly add the buttermilk,whisk well.

Now add the flour, baking powder to get a thick batter.

Heat a pan with enough oil,with a tablespoon drop enough batter to the hot pan.

Cook in medium heat, flip the oladi and cook the other side.

Oladi, Russian Breakfast Pancakes

Repeat the same process until the batter gets finished.

Serve the oladi warm with jam or else with sour cream.
